Disagree. Eastern Poland was a hotbed for Jews and targeted for liquidation. A lot of jews were outright executed on the spot. A lot of them were forcibly relocated. I don't call that a Holocaust.

That raises an interesting question I've never heard addressed: Did Germany redirect Dutch & French agriculture to their own needs during the Occupation? Less brie, veal and wine and more wheat, potatoes and sausage? And why was genocide off limits for non-Jewish Western Europeans? They killed quite a few anyway.

I'm sure they just took what they wanted. I don't know whether they changed food production to suit their traditional tastes but if they did it would be an inefficient use of the land. Much better to let farmers do what they know.
A change to more wheat production, for example, would need more specialised equipment such as binders, threshing machines, grain silos etc.
