I've eaten the real stuff, the stuff you can't order on a menu. There is an art to the way things are made in Asian food, in many cases it's based on the premise of balance. No one thing is meant to overpower the other components. When you order from a "Chinese restaurant" they are throwing together things that Americans think is real Asian food.
